Bottled Opinions is a collaboration by the enologist Desislava Hitova and sommelier Yana Petkova. Conceived as a women's wine project, Bottled Opinions is a philosophy of life, discovery and boundary pushing. Yana and Desislava's idea is to select varietals from different vineyards around Bulgaria and re- imagine them beyond the mainstream; natural, with style and vision that provoke the heart and mind. All of their wines are hand crafted with minimum intervention.

As the enologist, Desislava Hitova takes the lead role. The project exists because of her knowledge of the craftsmanship of winemaking. For 13 years she worked for a major wine producer where she had the possibility to travel, taste and educate herself further. She worked in the iconic Barossa Valley in Australia and visited four continents in search of wine and terroir knowledge. Knowing nearly every vineyard in Bulgaria, Desislava scouts and selects the grapes from vineyards across Bulgaria for each vintage. The priority is to locate small vinegrowers that are working organically and farm sustainably.

Yana Petkova takes care of marketing activities and copy-writing. She is a graduate of the Austrian Wine Academy (WSET Diploma holder). She is member of the tasting panel of Bulgaria’s leading wine magazine – DiVino, a wine consultant, educator, wine judge, wine writer, importer of Austrian wine, blogger and restaurateur. Her book “A, B, C, Wine” is an exemplary reference for wine knowledge in Bulgarian language.

The two make a powerful pair and are crafting unique low-intervention wines that reflect Bulgaria's diverse terroir.
